a Nutritarian Restaurant
My journey to becoming a nutritarian chef began in some of the most prestigious Austrian health resorts where I learned unique insight into “vollwertkueche” or “full value cuisine” while learning from leading nutritionists of the time. I continued my work in much praised high end restaurants learning how to create temptations of foods laden with butter, oils, white flour and sugar.
Much later, I witnessed a family member reversing heart disease by following Dr. Dean Ornish’s program of eating a fat free diet. While I continued to work in some of the finer restaurants I began to struggle with my own weight. It was not until I refocused my eating habits that I began to lose 35 pounds in just two months. I realized that the way we prepare foods can disguise the many harmful ingredients cloaked in the form of vinaigrettes, sauces, purees and pastries. It is my belief that we will have to shift our cooking techniques before we can hold off obesity and the many related diseases that haunt our times.
Today, Pyramid Bistro has the historic distinction of being named the first nutritarian restaurant by Joel Fuhrman, MD. A nutritarian describes a person who consumes the most micronutrients per calorie. His equation, nutrient divided by calories equals health is the guiding principle of a nutritarian and Pyramid Bistro. You can find nutrient guides and some of my recipes in his book “Eat to Live, Cookbook”. While we encourage you to eat a whole plant based diet we also offer choices of fish or meat that are prepared with our unique Nutritarian cooking style.
I hope this short story can inspire you to embark on a journey of healthy eating. We welcome everybody who is new to this philosophy of health through nutrition.
